Cheddars Houstonunique restaurants in Houston?

I was watching the Travel Channel the other day where they have been emphasizing unique preparations of traditional foods in different cities, in particular were the "strange" sandwiches, hot dogs and hamburgers. Examples included a sandwich with salad and French fries between the buns, steamed burgers, or a burger with a handful of cheddar cheese melted on top. I wondered where in Houston I could find similar "unique" ways to prepare dishes more traditional blue collar like this.
