Most sources I've seen says to keep refrigerated, but some say that to store securely wrapped in plastic, and some say loosely wrapped in wax paper so the cheese can "breats"? Does anyone know the best way to store cheese? I am very interested in hard cheeses such as cheddar. it must be kept refrigerated and airtight. tightly wrapped in plastic in the refrigerator is the best. when you have been advised to store the cheese in paper or other methods that allow the cheese to breathe, it is likely that they spoke of how aged the cheese, which is not what you looking. I put mine in Ziploc bags or plastic wrap in an airtight container in the meat drawer of the refrigerator ...
