During the summer, my family loves to travel and camp out. Our travel trailer has a stove, refrigerator and microwave, I find recipes that do not use an oven to make dinner for our family when we are camping on the road.

The two following recipes can be made entirely using your microwave and require less than one hour from start to finish. You can also do the day before and take them with you to reheat in the microwave, if desired.

Chicken with Mushroom Sauce

3 tablespoons butter (not margarine)
1 cup fresh mushrooms, sliced
2 tablespoons onions, finely chopped
1 / 3 cups milk
1 brick of cream cheese, cubed
1 / 2 c. teaspoon chicken soup base
1 / 2 teaspoon table salt
1 / 4 c. teaspoon black pepper
4 boneless chicken breasts without skin

In a glass dish, combine 2 c. tablespoon butter, mushrooms and onions into slices. minutes microwave on high power for 3 1 / 2, stirring halfway through cooking time. When done, add milk, cream cheese cubes, chicken soup base, salt and black pepper. Microwave on high for 3 minutes, stirring halfway through cooking time. Remove from oven and set aside. In another glass dish, place the chicken breasts and 1 tablespoon butter. Microwave breasts for 8-10 minutes or until no longer pink in center. Remove from oven dish and pour mushroom sauce on top. Stir to mix ingredients and put in place in the microwave. Cook on high for 3-4 minutes more.

Italian Chicken and Pasta Dinner

4 oz uncooked spaghetti
3 cups water
1 / 2 teaspoon table salt
2 tablespoons butter
1 / 3 cup onion, finely chopped
4-6 boneless chicken breasts without skin
8 ounces tomato sauce
1 / 2 teaspoon basil
1 / 2 teaspoon oregano
1 / 2 teaspoon black pepper
1 / 4 cup heavy whipping cream
1 tablespoon parsley
1 / 2 cup mozzarella cheese, grated finely
1 / 4 cup olives, sliced

In a large glass bowl, combine pasta, raw, water and salt. pasta microwave on high setting for 10-12 minutes or until tender. You want the pasta mix 2-3 times during cooking so that it is not sticky. Drain and reserve. In a glass dish, combine butter and onion. Microwave on high setting for 3 minutes then add chicken breasts and cook on high setting for 10-12 minutes or until meat is no longer pink. In another bowl, combine tomato sauce, basil, oregano, salt, pepper and whipping cream. (I like to use a silicone spatula.) Pour tomato sauce over the cooked chicken breasts and cook over high heat for 4-5 minutes. Remove the baking dish and sprinkle with parsley, mozzarella cheese and sliced olives on top. Put in the microwave and cook on high for 3-4 minutes longer or until cheese is melted. Serve over cooked pasta noodles.
