Can I use coconut milk instead of buttermilk in this recipe for pancakes? Here is the recipe:
1 1 / 2 cups wholemeal self awareness
2 cups buttermilk
2 eggs
Three tablespoons of pure honey with flowers pure maple syrup
Half a cup of frozen blueberries
Half a cup of frozen raspberries
spray olive oil
Or, if the coconut milk does not work that I can use sweetened condensed milk or evaporated milk?
I do not have buttermilk and can really go for some pancakes in good health ...
If you have regular milk, you can use. Add a little lemon juice and voila, you have the buttermilk.
Coconut, sweetened, evaporated or would probably be too sweet or too strong. Check the label for the evaporated milk to see if you can add water to make the consistency of regular milk. It would be too much work.

Use this recipe as a guide, the coconut is optional.
These are good and not really even need syrup.
1 cup baking and pancake mix or regular pancake mix
1 large egg
3 / 4 cup light coconut milk
1 / 2 cup shredded coconut, unsweetened dried
I think two cups of coconut milk is too strong. You can use evaporated milk or even regular milk that you have added a little lemon juice to create curds. I've done both those of the past.
