Use a little fat or whole wheat tortilla for the crust or wheat crust use a pre-made whole. (The recipe for a home whole wheat crust will be at the end of this response is from the internet, but I've used, modified and they love).
For filling, slice tomatoes and place on a baking sheet, drizzle with olive oil, then sprinkle with herbs Italian seasoning, a little salt and freshly ground black pepper. Roast in the oven at 350 degrees until they begin to caramelize or until edges just start to turn black. After they have made it through a food Processer and strain of tomato sauce in very good health, good for spaghetti or pizza sauce.
To use a trim low-fat mozzarella or provolone, then your choice of toppings. I like having a fresh lobster tail and cut into small pieces and arrange on pizza, then add pineapple and / or shrimp.
Cheese with chopped fresh basil just is so good.
WHOLE WHEAT pizza dough.
INGREDIENTS
2 1 / 2 cups whole wheat flour
1 cup unbleached all-purpose flour
1 / 4 cup honey or 1 / 2 teaspoon sugar
2 packages active dry yeast
1 teaspoon salt
1 1 / 2 cups of warm tap water
1 / 2 tablespoon olive oil
Flour for work surface
Watering cornmeal
Put the flour, baking powder, salt and sugar in a mixer fitted with a dough hook. While blender is running, gradually add water and knead on low speed until dough is firm and smooth, about ten minutes. Turn off the machine.
Pour the oil inside the bowl. Turn on low once more for 15 seconds to coat inside of bowl and all surfaces of dough with oil. Cover bowl with plastic wrap. Let rise in warm place until doubled in volume, about two hours.
Preheat your oven to highest setting, 500 ° or 550 ° F. If you use a pizza stone, place stone in the oven on bottom rack, preheat the oven one hour ahead. Knead the dough, cut in two. On a generously floured work surface, place one half of dough.
By the hand dough forms a loose ball, stretch into a circle. Using floured rolling roll Roll out the dough into large circle until very thin. Do not worry if your circle is not perfect and if you have a hole, simply pinch edges back together.
To prevent the dough from sticking to the counter, turn dough over, add flour to the dough, counter and rolling pin as needed. Sprinkle pizza or cookie sheet generously with cornmeal. Transfer the pizza dough or a cookie sheet with no lip. Add toppings.
