YES! there is such a recipe. I am soft oatmeal chocolate chip cookies all the time. If you do not want to use chocolate chips, you can substitute raisins or M & M's.

you'll need:

a stick of butter softened
1 1 / 2 cups brown sugar
3 eggs
teaspoon vanilla
1-2 tablespoons corn syrup
1 1 / 2 cups creamy peanut butter
4 1 / 2 cups chocolate chips
2 v. teaspoon baking soda

In a large bowl, combine sugar and butter until smooth. then add the vanilla and three eggs (one at a time) and mix well. then add the peanut butter and corn syrup. Once blended, add the oatmeal. then add baking soda. Finally, add the chocolate chips.

made a big batch. Preheat oven to 350 degrees. Once the oven is heated before, bake the cookies at 350 for 10-12 minutes.

Oatmeal cookies without Chewy

1 / 3 cup unsalted butter

1 1 / 2 cups rolled oats

1 / 2 cup sugar

1 / 4 cup brown sugar - just, well packed

1 / 8 t salt

1 t vanilla extract

1 egg

Melt butter and let cool. Place oats in a medium bowl. Stir in both sugars and salt and stir to break up clods.

In another bowl, whisk together melted butter, vanilla and egg. Stir this mixture into the oatmeal, mix with hands or large wooden spoon to work the ingredients. Form a large ball of dough.

Chill dough 20 minutes.

Preheat oven to 350 º F. Meanwhile, prepare a baking sheet by lining with parchment paper.

Form chilled dough into balls 1 inch and flatten slightly on the plate. Bake for 13-17 minutes or until edges are browned and the tops of cookies are golden in color medium.

Cool well on the baking sheet (about 10 minutes) before attempting to remove, using a metal spatula or icing knife.

The dough can also be brought to room temperature and flattened more when placed on the hotplate to a big, Cookie Crisp, and lace. Keep refrigerated biscuits.

Makes 1 cookie half dozen.

I would be interested in that too! I have seen recipes oatmeal cookies that do not use flour and oats using the old type, and they are not cooked. Instant oatmeal makes the cookie texture strange that cookies should not have.
