The following three salads that have become hot some of my favorite salad recipes.
None of them need to be anywhere near a hot stove or oven, except for boiling water, and all are perfect, even for the hot days of summer.
Serve them as side dishes of vegetables or a light meal with a green salad and crusty bread.
Shrimp and Avocado Salad
This is a beautiful salad recipe that is great as a salad or as a light lunch recipe. Serve in lettuce cups for lunch with crusty bread and a great dessert. Simply perfect!
1 pound frozen cooked shrimp, thawed 1 cup chopped celery 2 tablespoons Italian dressing 4 tablespoons mayonnaise Salt and pepper 1 avocado Two teaspoons lemon juice
Combine shrimp, celery, Italian salad dressing and mayonnaise. Season to taste with salt and pepper. Chill, covered until serving time.
Just before serving, peel and dice avocado. Mix immediately with the lemon juice to prevent the lawyer out. Add to shrimp mixture and toss gently.
Serves 6
Cucumber
This recipe is delicious, but so easy. It is a great recipe to serve society in a barbecue, as it prepares in advance and is in the refrigerator for several hours until you are ready for it. The best summer entertaining recipes are those that do not require the host and hostess to be in the kitchen while cooking living outside guests.

Mix all ingredients thoroughly in a large bowl. Refrigerate for 2 hours before serving.

Lime Jello Cottage Cheese Salad
This is a salad recipe beautiful light that is perfect for a summer barbecue, but also works very well all year on a buffet table. The addition of cottage cheese may sound odd, but it is a mixture with the Jello flavor. The crisis of celery and green pepper add another layer of flavor and fresh taste.
