LIGHT FLUFFY Meat Loaf

Ingredients

1 lb. ground beef

1 can (6 ounces) tomato paste

1 / 2 c. Oatmeal

3 tbsp. Green pepper, finely chopped or celery

2 tablespoons. Bran

2 tablespoons. Wheat Germ

1 sm. Onion, finely chopped

1 tbsp. Fresh parsley

1 egg, lightly beaten

1 / 4 CC. Minced garlic

1 / 2 CC. Salt

1 / 4 CC. Freshly ground

chili sauce

Instructions

Preheat oven to 350 degrees. Mix all the ingredients of bread, using your hands. Form into loaf and place in 9 X 3 X 5 loaf pan covered with a layer of chili sauce (or ketchup if desired) Bake for 50 minutes to 1 hour. (Do not overcook as part of the secret of fluffiness is cooking time.) Serve the slices of meatloaf and hot. Serves 4. Variation: ground veal and ground beef half half may be used for meatloaf - lower in calories.

PICANTE Chicken Salad

Ingredients

4 ch. Chicken breast halves, broiler / fryer, boned, skinless

1 / 2 c. Dressing, bottled, ranch, fat free (works well with chicken salad recipes like this)

2 tablespoons. Sauce piquant

1 tbsp. chili powder, divided

1 / 4 CC. Salt

1 tbsp. Oil, vegetable

4 c. Green salad, mixed, torn into small pieces

1 Med. Avocado, peeled, halved, pitted, cut into horizontal slices

1 Med. Red onion, thinly sliced into rounds

2 med. Tomatoes, cut into 8 wedges each

2 tablespoons. Cilantro, chopped or

2 tablespoons. Parsley

Instructions

In a small bowl, combine salad dressing, hot sauce and a teaspoon 1 / 2. chili powder and set aside. Combine remaining 1 / 2 CC. chili powder, salt and sprinkle over chicken. Heat oil over medium-high temperature in a frying pan. Add chicken and cook, turning, about 8 minutes or until brown and fork tender. Remove chicken to a cutting board and cut horizontally into 1/2-inch slices. Place one quarter of the lettuce on each of four serving plates. On each plate, place half the sliced chicken breast over salad. Place avocado, onion and tomatoes around the chicken. Pour 2 tablespoons. dressing on each salad. Sprinkle with cilantro or parsley, if desired (works well with many recipes of light). Source: Cooking Chicken - 1994. Pumpkin Pie LIGHT

Ingredients

3 eggs, beaten

1 / 2 c. Packed brown sugar

1 tbsp. Honey

1 tbsp. ginger

1 tbsp. Cinnamon

1 9-inch deep-dish frozen pie, Shell, thawed

1 can (16 ounces) pumpkin

6 pkg. Envelopes Calorie Sweetener

1 tbsp. Nutmeg

1 1 / 2 tsp Skim

Whipped topping

Orange peel

Instructions

Preheat oven to 350 F. 2. In a medium bowl, mix all but the milk.

Gradually add milk. Pour mixture into pie shell and bake for 70-80 minutes or until knife inserted halfway between center and edge comes out clean. Cool, then top each slice with 2 tablespoons. whipped topping and grated orange zest.
