....? Manchego Cheese What are the types of cheeses like manchego? I know it's a cheese of semi healed, but not always readily available.

Substituting correctly depend on what you use it for (a cheese plate? Cooked in a dish? Grated on top?). Here are the properties of the channel, and you can decide the best substitute for your use:
Manchego is a firm, cured Spanish cheeses made from sheep's milk. So your first cheese, better in some other Spanish cured from sheep's milk. A specialty cheese shop might have, but if you're shopping in the supermarket, your cheese department is often organized by region.
Mexican manchego is slightly different (and although it may be called Manchego rate it technically called Manchego Manchego since faith is matured in caves in La Mancha). But Mexican Manchego can be a substitute, and can therefore Oaxaca cheese.
Any other good substitute will be a non-Spanish - but the sheep's milk cheese cured. Your sources:
Italy: Pecorino Romano. A little sharper and Tangier Manchego, but widely available.
French: Gruyere. Sweet and "deep" in the style of Manchego, but a bit of a cousin, however, and widely available.
America: [high quality, the company], Monterey Jack. It must be visibly firm enough to grate (not soft!). It should look like the color and texture of Romano, and will be more expensive than your "famous brand of cheese food." If you do not select more quality Monterey Jack, then do not go with Jack at all.
In all, easier to substitution? Pecorino Romano.
