Meatless RecipesQuick n Easy recipes without meat?

I am a non-vegetarian, but I'm planning on going without meat for some time to save money. What are good meatless recipes hose? I'm looking for things I can do and reheat throughout the week between the travel magazine (casseroles, pizzas, soups, etc.), and as quick easy meal to make between the two for a change of pace (sandwiches, pasta dishes ...).

Easy Pasta Primavera

8 ounces pasta
1 / 4 cup butter
1 1 / 2 cups milk
1/2-1 1 / 2 tablespoon flour
1 packet of vegetable soup envelope
Parmesan
Salt and pepper
** Optional 1 / 2 bag of frozen California blend, cook according to instructions, then add the mixture before the soup.


Boil pasta. Combine milk, soup mix, salt n pepper. Melt the butter in a saucepan and add flour. Stir soups. Bring to a boil.
Then simmer for about 10 minutes or until vegetables are well cooked. Toss with pasta.

Sprinkle with Parmesan cheese.

Couscous and Black Bean

10 min 10 min 15 servings

1 cup cooked couscous
1 1 / 4 cups chicken broth
Three tablespoons of virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
1 / 2 teaspoon ground cumin
8 green onions
1 red pepper, seeded and chopped
1 / 4 cup chopped fresh cilantro
1 cup frozen corn kernels, thawed
2 (15 ounce) cans black beans, drained
Salt and pepper

chicken broth Bring to a boil in a 2-liter or more pot and add the couscous.
Cover pan and remove from heat.
Let stand for 5 minutes.
In a large bowl, whisk together olive oil, lime juice, vinegar and cumin.
Add green onions, red pepper, cilantro, corn and beans and toss to coat well.
Fluff the couscous, breaking up the pieces.
Add to the bowl with the vegetables and mix well.
Salt and pepper to taste and serve immediately or chill until serving time.

Linguine with Clam Sauce

6 servings 10 min 5 min Preparation

2 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, minced
2 (6 1 / 2 ounce) cans chopped clams (drained, reserve liquid)
1 tablespoon dried parsley
1 / 2 teaspoon oregano
1 / 2 teaspoon dried basil
1 / 4 c. teaspoon red pepper flakes
A pinch of salt
1 pinch pepper
1 pound cooked linguine

Heat the oil in a skillet over menium.
Add the onion and garlic and cook until the onion is tender.
Add clam juice to the pan and add all seasonings.
Simmer over low for 5 minutes.
When the pasta is ready, add the clams and remove from heat.
Pour the sauce over the drained pasta, mix

Onion Pancakes Kittencal's / latkes

3-4 servings 20 min 20 min

2 1 / 2 cups onions, diced (I just cut about 3 medium onions for this)
1 green onion, finely chopped (optional)
3 / 4 cup flour
1 1 / 2 tsp tablespoons sugar
2 v. teaspoon baking powder
1 1 / 2 tsp teaspoon seasoning salt (can use regular salt)
1 / 8 c. teaspoon cayenne
1 / 2 teaspoon garlic powder (optional, or use 2-3 teaspoons fresh garlic)
black pepper (optional)
3 / 4 cup milk
oil (for frying, do not use olive oil)


Finely chop the onions (I chop about 1/4-inch) and place in a bowl.
In another large bowl, mix flour salt, sugar, baking powder, seasoning, cayenne, garlic powder (if using) and a small amount of black.
