mmm, love Paula Deen. I tried these in his shows and liked ---
Mini Crawfish Pies:
Crust:
8 tablespoons butter, cut into cubes and softened
1 (3 oz) cream cheese, softened
1 cup all-purpose flour
Filling:
6 tablespoons butter, sliced
6 tablespoons all-purpose flour
1 large yellow onion, diced
4 stalks celery, diced
2 small carrots, diced
1 bunch green onions, diced
1 green pepper, diced
2 shallots, diced
1 pound frozen crayfish tails, thawed
3 tablespoons Cajun seasoning
Kosher salt and freshly ground black pepper
4 cups chicken broth


Heat oven to 325 degrees F.
For the dough: In a large bowl, combine butter and cream cheese. Stir in flour and let stand for 1 hour in refrigerator. Divide the dough, reserving 1 / 3 for high pie, and the use of two thirds for the bottom crust. To form segments of the pulp to create balls of dough about 1 inch in diameter and place in bottom of muffin cups, flattening to form the bottom crust. Bake the crusts until golden brown, about 20 minutes.

For the filling: In a saucepan, add the butter and flour and stir over and to create a roux. Cook until the mixture is the color of peanut butter. Add all vegetables and sauted until tender, about 5-10 minutes. Add crawfish, Cajun spices, salt and pepper to taste. Saute mixture for 2-3 min. Add chicken broth and cook, stirring, until mixture boils and thickens. Pour mixture into crusts. Top with circles of uncooked dough cut from the reserve one third of the original paste. Make a small slit in the top of the dough to allow steam to escape. Bake for 20-25 minutes or until golden brown. Serve hot.

Pickled Okra Sandwiches-
pickled okra
cream cheese, softened
white bread, clearing the edges and flatten
fresh parsley, chopped

Take the square bread, spread lightly with cream cheese. Roll in bread pickled okra and coat outside of bread with cream cheese and roll in parsley.

Oven-Baked Dutch Apple Pancakes:
2 cans apple pie filling
2 tablespoons butter
1 tsp teaspoon ground cinnamon
3 eggs
1 / 2 cup milk
Half cup of all purpose flour
1 tablespoon sour cream
1 teaspoon lemon zest
1 / 4 c. teaspoon salt
Confectioners sugar, for dusting

Preheat oven to 350 degrees F.
In a cast iron skillet 10 inches, the hot apple pie filling, butter, cinnamon. In a bowl, beat eggs until frothy. Add milk, flour, sour cream, lemon zest and salt. Beat until batter is smooth. Pour over apple mixture into the hot pan and immediately put the pan into the oven. Bake for 20-25 minutes or until the pancake is puffed and golden. Using a small strainer, lightly dust the top of the pancake with confectioners' sugar. Serve hot.
