Anyone have a pumpkin muffin recipe really great? Do you have a great recipe for pumpkin muffins? Sought on my website and some look ok, but I had a really good recipe for them. I got one from a local bakery and they were ok, but certainly lacking any spices and all kinds of good "fall" taste, I know I can do better! Thank you for any suggestions or recipes!
1 1 / 2 cups raisins
4 3 / 4 cups all purpose flour
4 cups white sugar
1 1 / 2 tsp teaspoon baking powder
1 1 / 2 tsp teaspoon baking soda
1 1 / 2 tsp teaspoon salt
1 1 / 2 tsp teaspoon nutmeg
1 1 / 2 tsp teaspoon cinnamon
1 1 / 2 tsp teaspoon ground cloves
6 eggs
1 (29 ounces) pumpkin
1 cup unsweetened applesauce
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 C). Grease three sessions of 12 muffin cups, or line with paper muffin cups. Soak raisins in hot water for ten minutes to rehydrate, then drain.
In a large bowl, combine flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon and cloves. In another bowl, combine eggs, pumpkin and applesauce until smooth. Add this mixture to dry ingredients and mix well to obtain a smooth paste. Stir in raisins and nuts into the dough. Pour batter into prepared muffin cups.
Bake for 30-35 minutes in the preheated oven, or until a toothpick inserted in center comes out clean.
