I'm looking for some vegetarian pasta recipes spicy. Can anyone help? I love pasta, but I want something vegetarian. I also want a recipe that is easy to cook and spicy.
Ingredients10 oz fettuccine or spaghetti
1 / 4 C dry white wine or apple
C 1 onion, chopped
4 cloves garlic (or more)
1 red bell pepper LG; coarsely
C 1 Carrots, grated
1 1 / 2 c broccoli florets
1 tsp chopped fresh chives, chopped
1 / 2 C Plain nonfat yogurt
2 TB parmesan cheese
1 / 3 c Part-skim ricotta
1 / 2 C sour cream skimmed
1 / 3 c Stoneground Mustard
1 ts Honey
Salt and ground pepper
InstructionsCook pasta in boiling salted water until al dente. Drain. While pasta is cooking, nonstick skillet lightly with oil and large, over medium-high. When the pan is hot, add the wine or juice, onion and garlic. Cook, stirring, until softened, about 5 minutes. Add peppers, carrots, broccoli and chives. Cook, stirring, until tender, about 5 minutes. While vegetables are cooking, combine yogurt, cheese, sour cream, mustard and honey in a small bowl. Season with salt dpepper. Toss with vegetables and pasta. Serve immediately
1 lb. spaghetti, dry (try spinach or whole wheat)
1 lb shrimp (cooked or frozen)
1-28 oz can stewed tomatoes
1 medium onion, sliced
2 cups broccoli flowers (fresh or frozen)
2 cloves garlic, finely chopped
2 v. tablespoon olive oil
1 tsp tsp dried oregano
1 tsp teaspoon dried basil
1 tsp teaspoon crushed red pepper
Salt and pepper
Boil water in a large saucepan and cook the pasta according to instructions.
When preparing pasta, hot oil in large skillet over medium heat and fry the onions just until they begin to caramelize. Then add the garlic, tomatoes, broccoli and shrimp (if using frozen shrimp run under tap water until thawed before adding to skillet).
Cover and simmer over medium-low heat for 10-15 minutes or until broccoli is tender range. (If using cooked shrimp added over the last 2 minutes of cooking just to heat through, stirring occasionally).
Drain the noodles and mix with the contents of the pan and add oregano, basil, red pepper flakes, salt and pepper. Mix well, taste and adjust seasoning. Top with grated Romano or Parmesan cheese before serving.
Advice / Tips: If you're short on time, steam broccoli in microwave to soften it before adding the sauce and drained tomato juice to decrease the time it takes to reduce it. Get creative by adding one of your favorite fresh, frozen or leftover vegetables like mushrooms, peppers, asparagus or zucchini.

Try running all part of your own recipes by experimenting with some of your favorite spices and vegetables. I always enjoyed being creative in the kitchen ... it's fun!

Add jalapeno peppers to your favorite pasta sauce. You can fry them in olive oil, adding, or not, as you prefer.
