Yogurt ProcessingPlease state the weaknesses of the heat exchanger in the processing of yogurt?

if there are shortcomings, please suggest a solution to overcome these weaknesses .. Thank you.

Potential difficulty of cleaning is the first thing that comes to me. So keep in mind that echoes in the design would be wise.
My experience with heat exchangers with wastewater, where the cleanliness itself was not that important, but we had to keep the thing clean enough to maintain efficiency and prevent clogging. Even that was a job, I think to keep food standards would be at least an order of magnitude more difficult.

So I suspect the yogurt is sensitive to shear, so you probably want to avoid sudden changes in direction and confined spaces.
